Breadmaker Bread – using Breadfruit flour
Finally a gluten free, seed free and grain free bread recipe thanks to the amazing Glenda.
1 ½ cups breadfruit flour ¾ cup tapioca flour
1 cup potato flour 1 ½ teaspoons salt
1 tablespoon guar gum 1 ⅓ cups warm water
2 eggs (room temperature) 2 Tbsp + 2 tsp rice bran oil
1 tablespoon honey 1 tablespoon active dry yeast
In a large bowl combine the breadfruit flour, tapioca flour, potato flour, salt, and guar gum.
In a medium bowl, thoroughly whisk together the water, eggs, oil, and honey.
Pour the wet ingredients into the breadmaker.
Carefully add the dry ingredients on top of the wet ingredients in the machine. Do this by using a ¼ cup measure and gently scooping the dry ingredients in, creating a layer on top of the wet ingredients. Then, sprinkle the top layer with the yeast.
Set your bread machine to the setting for gluten free bread. I don’t have that setting on my Sunbeam bread maker so I use the cake/quick bread, which is setting No. 10. As the machine begins the mixing cycle, use a rubber scraper to scrape down the sides of the pan, making sure all of the loose flour is incorporated into the dough.
When the baking cycle is complete, remove the bread and place on a cooling rack. Let the bread cool completely before cutting. Use an electric knife to cut.
